Marinated Tomato Vinaigrette
Great over mixed greens.
- 1/4 cup extra virgin olive oil
- 1/4 cup tomato-infused oil*
- 2 Tbs. red wine vinegar
- 2 Tbs. drained and chopped Sonoma® Marinated Tomatoes
- 2 tablespoons finely chopped mint
Whisk together all ingredients in a bowl. Toss with mixed greens. Top with shavings of dry aged cheese if desired.
*The oil in which the tomatoes are marinated. If you do not have enough for this recipe, warm some extra virgin olive oil in a small saucepan over low heat. Add 2 Tbs. chopped dried tomatoes to this oil, remove from heat and allow to steep for a few hours.
