Using packaged fresh salad greens cuts prep time to almost nothing for this salad.

Grilled Fish with Dried Tomato, Lemon and Olive Sauce
This rich sauce of dried tomatoes, lemon and olives is a perfect foil for meaty fish such as tuna and swordfish, much beloved by the Pugliese and Sicilians. The sauce can be made ahead and left at room temperature for a few hours.

Grilled Sun Dried Tomato Pizza
Everyone loves pizza (some of us more than others). Pizza is something that is so easy to make, anyone can do it in under 30 minutes. You can build it any way you like it. Go nuts!

Lychee-Cranberry Salsa
Salsas are not only savory — some can be sweet such as this lychee-cranberry version which combines two fruits from opposite sides of the world: the New England cranberry and the Far East lychee. This versatile salsa may also be transformed into a warm compote or puréed and frozen into a myriad of cold confections.

Malaysian Chicken Salad
Mangos, Pineapple, orange juice, and some chicken to boot!

Marinated Tomato Vinaigrette
Great over mixed greens.

Muffaletta Sandwich
This Mediterranean Muffaletta Sandwich is a hit with everybody! Great after your next century ride!

Mulled Cider (hot)
This is a great drink that you can substitute for Coffee or Tea. It requires no sugar. Warning: its addictive.

Orecchiette with Brocooli, Chickpeas, Onions and Dried Tomat
An Italian pasta from Puglia, orecchiette means "little ears." The central dimple in the noodle is a perfect trap for those chickpeas. If you cannot find orecchiette at your market, you can make this with penne, farfalle or another short pasta.

Not as quick as opening a jar of ready-made sauce, but will pique appetites with the aromas of home cooking.
