Anyone have any great recipies? That's the hardest part of being vegetarian...or perhaps better, any references to great books with vegetarian recipies for the athlete? Whole weeks of months of breakfasts, lunches, dinners with shopping lists preferred - we might as well try to solve the problem with one fell swoop, no? |

Do you like eggplant? Do you like pesto?
Slice eggplant into approx. 3/8" slices. Dab with paper towel. Score on both sides. Brush with Pesto. Bake at 375 for 15 minutes. Pull out of oven. Turn brush with Pesto again. Bake 10 more minutes. Pull out, sprinkle with fresh parmesian cheese and serve.
Or
Slice eggplant into 3/8" - 1/2" slices. Sprinkle with sea salt and let sit for 30 minutes or so. Heat olive oil and garlic in saute' or fry pan. Pan fry eggplant on each side until a very dark brown. Serve hot.

On the HOMEPAGE there is a "recipe" section on the left. Click on it, the choose "Vegetarian" from the list on the right... there are about 60 recipes there. Some of them look pretty good.

I love the cook book Vegetarian for Everyone. I buy it for practically everyone I know. For someone trying to train there are great receipes using a lot of legumes that would be good. I love the Mudajarrah lentil reciipe. |
